- 4 oz hazelnuts
- 1/3 cup sugar

1Preheat oven to 400°F. Line a baking sheet with parchment paper.

2Spread nuts on baking sheet and bake 5-6 minutes, until golden brown and fragrant.

3Transfer hot nuts to a clean tea towel. Rub vigorously to remove skins. Discard skins and roughly chop nuts. Return nuts to baking sheet, spreading out in an even layer.

4In a medium, heavy-based saucepan, combine sugar and 1/2 cup water. Stir over medium heat until sugar dissolves. Increase heat to high and bring to boil. Boil 8-10 minutes, without stirring, until just beginning to turn a golden caramel color around edge. Remove from heat and swirl in pan to spread color.

5Pour mixture over nuts to cover. Allow to cool completely. Break into pieces.
