Hazelnut Torte

Ingredients

  • 6 eggs, separated
  • 1 c. sugar
  • 1/2 lb. shelled hazelnuts, ground
  • juice and grated rind of 1 medium to large lemon
  • 1 medium carrot, scraped and finely grated
  • 2 Tbsp. graham cracker crumbs
  • 1 oz. fine bitter chocolate
  • 1 Tbsp. margarine or butter

    Preheat oven to 350°.

    Beat egg whites with 1/2 cup sugar until thick and glossy.

    With same beater beat yolks until thick and lemon colored.

    Gradually add remaining 1/2 cup sugar, beating until mixture is light and fluffy.

    Combine yolk mixture with nuts, lemon juice, rind and grated carrot.

    Stir into yolk mixture a few tablespoons of egg whites and blend in the rest.
