Healthy Avocado Egg Salad

  • 2 whole Avocados
  • 4 whole Hard Boiled Eggs
  • 6 whole Hard Boiled Egg Whites
  • 1 whole Lemon, Juiced
  • 1/2 cups Red Onion, Diced
  • 1/2 cups Cherry Tomatoes, Diced
  • 3 Tablespoons Capers
  • 1/4 cups Fresh Dill

Directions

    In a large bowl, use the back of a fork to mash the avocado. Chop hard boiled eggs and hard boiled egg whites.

    Add eggs, lemon, red onion, tomatoes, capers and dill into the bowl with the avocado and mix to combine.

    Eat by itself, in a wrap, with crackers or on a sandwich for a delicious healthy avocado egg salad.
