- 1 cup chopped zucchini
- 1 large tomatoes, chopped (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 1/3 cup grated parmesan cheese
- 1/2 cup Bisquick Heart Smart mix
- 1 cup nonfat milk
- 1/2 cup fat-free fat-free liquid egg product or 2 eggs
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Directions

1Heat oven to 400°F.

2Spray 8-inch square baking dish or 9-inch pie plate with cooking spray.

3Sprinkle zucchini, tomato, onion and cheese in pie plate.

4In medium bowl, stir remaining ingredients until blended.

5Pour over vegetables and cheese.

6Bake uncovered about 35 minutes or until knife inserted in center comes out clean.

7Cool 5 minutes.

8Cut into four portions.
