- 3 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons honey
- 2 tablespoons coconut oil
- 1 banana
- 2 carrots
- 2 apples
- 1 1/2 cups Weet-Bix
- 1 cup oats
- 1/2 cup shredded coconut
- 1/2 cup black currants
- 1/2 cup macadamias
- 1/2 cup almond meal
Directions

1Preheat fan forced oven to 180 degrees Celcius.

2Line a 20 x 30 cm tray with baking paper.

3Beat eggs, add honey, vanilla and coconut oil.

4Mash bananas and add to mixture.

5Grate carrots and apples and add to mixture.

6Crush Weet-Bix and add to mixture.

7Add rest of dry ingredients.

8Combine with your hands and press into prepared tray.

9Bake for 20-25 minutes.

10Allow to cool slightly in tin.

11Slice into 12 breakfast portions or 18 snack portions.
