- 2 c. whole wheat flour
- 2 tsp. ground cinnamon
- 1 Tbsp. baking soda
- 1 c. raisins
- 1/2 c. pecans or walnuts, chopped
- 2 eggs, beaten
- 1/2 c. oil
- 2 tsp. vanilla
- 1 c. honey
- 2 c. ground or grated carrots
Directions

1Stir first 5 ingredients together.

2Blend next 5 ingredients in order given.

3Stir all together easily with minimum strokes. Turn into an oiled and floured baking ring.

4Bake at 325° for 1 hour or until knife inserted comes out clean.
