  • 1/4 cups Coconut Oil, Liquid
  • 1/2 cups Pure Maple Syrup
  • 1 teaspoon Cinnamon
  • 2 teaspoons Vanilla
  • 1/2 teaspoons Kosher Salt
  • 2 cups Rolled Oats
  • 1/2 cups Sliced Almonds
  • 1/2 cups Pecans, Roughly Chopped
  • 1/4 cups Whole Flax Seeds
  • 1/2 cups Shredded Coconut (unsweetened)
  • 1 Tablespoon Milled Flax Seed (optional)

Directions

    Preheat oven to 350°F.

    In a small mixing bowl, combine liquid (or melted) coconut oil, maple syrup, cinnamon, vanilla and salt. Set aside.

    On a large parchment-paper-lined baking sheet, combine oats, nuts, flax seed, and coconut. Bake for 15-20 minutes, stirring twice, until toasted brown and fragrant.

    Remove oats and reduce oven temperature to 300°F. Drizzle maple syrup mixture over the oats and carefully stir until well combined. Return to the oven and bake at 300°F for 25 minutes.

    Remove from the oven and fold granola onto a large sheet of parchment paper to cool fully. Store in an airtight container for up to 5 days. Enjoy over your morning yogurt!
