Ingredients
- 1 (16 oz.) can unsweetened crushed pineapple
- 1 c. grated carrots
- 1 mashed banana
- 1/2 c. chopped prunes
- 2 tsp. cinnamon
- 1 tsp. vanilla
- 1/4 c. corn oil
- 1 egg
- 1 tsp. baking soda
- 1 tsp. baking powder
- 12 Tbsp. oat bran
- 2 c. whole wheat flour
Directions

1Preheat oven to 350°.

2In a bowl, mix pineapple, carrots, banana and prunes.

3Add vanilla and cinnamon.

4Add oil and egg. Add dry ingredients and mix well.

5Fill lined paper cups in a muffin tin.

6Bake for 10 to 15 minutes or until a toothpick comes out clean.

7Cool.

8Remove and store in refrigerator.

9Makes 12 large muffins.

10You may add 1/2 cup raisins for variety.
