Ingredients

  • 1 (16 oz.) can unsweetened crushed pineapple
  • 1 c. grated carrots
  • 1 mashed banana
  • 1/2 c. chopped prunes
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/4 c. corn oil
  • 1 egg
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 12 Tbsp. oat bran
  • 2 c. whole wheat flour

Directions

    Preheat oven to 350°.

    In a bowl, mix pineapple, carrots, banana and prunes.

    Add vanilla and cinnamon.

    Add oil and egg. Add dry ingredients and mix well.

    Fill lined paper cups in a muffin tin.

    Bake for 10 to 15 minutes or until a toothpick comes out clean.

    Cool.

    Remove and store in refrigerator.

    Makes 12 large muffins.

    You may add 1/2 cup raisins for variety.
