Ingredients

  • 1 c. whole wheat flour
  • 1 c. All-Bran
  • 1 c. oatmeal (regular or quick; not instant)
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 1 1/4 c. skim milk or more
  • 2 egg whites
  • 1/4 c. vegetable oil
  • 1/2 c. raisins
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1/2 c. sugar

Directions

    Mix whole wheat flour with baking powder, sugar, salt and cinnamon.

    Soak All-Bran and oatmeal with milk.

    A small amount more of milk may be needed to improve consistency.

    Mix egg whites, oil and vanilla.

    Combine all ingredients; stir just enough to moisten.

    Fold in raisins.

    Pour batter evenly into muffin pans.

    Coat muffin pans lightly with vegetable oil spray such as Pam.
