Ingredients: 3 5/16 pounds stewing steak; 3 onions peeled and coarsely diced; 3 1/2 ounces smoked streaky bacon diced; 3 5/8 cups mushrooms halved; 2 tablespoons oil; 3 slices pumpernickel bread crumbled; 1 cup dark beer; 3 1/8 cups bouillon; 4 gherkins sliced; 1 9/16 cups pickled onions drained; 7/8 cup sour cream

3 onions peeled and coarsely diced
3 1/2 ounces smoked streaky bacon diced
3 5/8 cups mushrooms halved
2 tablespoons oil
3 slices pumpernickel bread crumbled
1 cup dark beer
3 1/8 cups bouillon
4 gherkins sliced
1 9/16 cups pickled onions drained
7/8 cup sour cream

Directions

Preheat oven to 400°F. Heat oil in a roasting pan and sear meat. Add bacon, onions and mushrooms and saute for 4-5 mins. Season then add crumbled bread. Add beer and stock. Bring to a boil, cover and cook for about 1 1/2 hours. About 5 mins before end of cooking time, add pickles and pickled onions to stew. Serve sprinkled with black pepper and a dollop of sour cream.
