Hearty Soup

Ingredients

  • leftover ham bone, shoulder bone or 3 smoked ham butts
  • 1/2 c. dried lima beans
  • 1/2 c. dried split or whole peas (no need to soak)
  • 2 Tbsp. barley
  • 2 Tbsp. regular rice
  • 1 (16 oz.) can tomatoes
  • 1/2 tsp. black pepper
  • 8 c. cold water
  • 1/2 c. chopped celery
  • 2 large chopped onions
  • 2 potatoes, peeled and diced
  • 1 washed, unpeeled, chopped carrot
  • 1 clove garlic, minced (if desired)

Directions

    Cover first 7 ingredients with 8 cups cold water; bring to boil, then simmer for 1 hour.

    Then add rest of ingredients. Bring to a boil and simmer one more hour.

    When cool, remove bones and add meat to soup.

    If soup is too thick, thin with a little cold water.

    Season to taste.

    Freezes well.
