Heathers Vegetable Soup

  • 1 medium potato
  • 1 medium kumera
  • 1 medium parsnip
  • 1 medium carrot
  • 1 small leek
  • 5 cup vegetable stock
  • 2 pinch salt
  • 4 pinch ground black pepper

    pour stock into a large sauce pan and turn on heat to bring to boil

    peel and wash all the vegetables except leek.
  3. 3
    chop vegetables into even sized cubes
  4. 4
    add diced vegetables to the stock.
  5. 5
    simmer gently for around 8 minutes.

    wash and trim leek.

    slice into rounds and then cut half way through the diameter of each round so that when they cook you end up with strips.

    add leek to pot after the 8 minutes are up.

    simmer for a further 5 to 10 minutes depending on the size of your diced veg.

    serve in a bowl with extra salt and pepper and buttered crusty rolls or bread
