- 2 c. peeled diced fresh tomatoes
- 1 (15 oz.) can chickpeas, undrained
- 1 sliced sliced summer squash
- 2 onions, sliced
- 1/2 green pepper, diced
- 1 1/2 c. white wine
- 5 garlic cloves, minced
- 1 bay leaf
- 1/2 tsp. paprika
- 1 1/4 c. Monterey Jack cheese
- 1 c. grated Romano cheese
- 1/2 c. heavy cream
Directions

1Preheat oven to 375°.

2Butter a 3-quart casserole or baking dish.

3Combine all ingredients (except cheeses and cream) in dish. Cover and bake for 1 hour.

4Stir in cheeses and cream.

5Lower heat to 325° and bake 10 to 15 minutes longer.
