Heavenly Strawberry Pie

  • 1 cup of sugar
  • 1/4 cup cream of tartar
  • 4 eggs separated( use only whites, store yolks for a different recipe)
  • 1 teaspoon of lemon juice
  • 2 pints of strawberries,( washed, dried and hulled )
  • 1/2 cup seedless strawberry jam
  • Fat free cool whip topping optional

Directions

    Sift together 1 cup of sugar and cream of tartar.

    Beat egg whites until stiff but not dry.
  3. 3
    Gradually add sugar mixture, continuing to beat until well blended.

    use this meringue to line the bottom and sides of a 10 inch pie plate.Hollow out most of the center by pushing the meringue to the sides of the pie plate.

    Bake at 275 degrees for 1 hour. Remove from oven and cool.

    Melt jam with lemon juice in a small saucepan over low heat until spreadable.

    Place berries, cut side down in cooled meringue shell.

    Brush tops with jam mixture. Cool in fridge for 6 hours.

    serve with fat free cool whip on the side if desired.
