- 1 cup ricotta cheese
- 2 tablespoons mixed chopped herbs, parsley or basil
- 1/4 cup grated parmesan
- Salt and pepper
- 1 egg, lightly beaten
- 18 wonton wrappers
- Water
- Tomato sauce
- Basil leaves
Directions

1In a small bowl combine ricotta cheese, herbs, parmesan, salt and pepper and egg.

2Place one teaspoon of cheese mixture in center of wonton wrapper and wet two adjacent sides of square.

3Fold opposite corners over to form a triangular ravioli.

4Set on wax paper and repeat process with remaining wrappers.

5Bring a large pot of water to a boil and season with salt.

6Reduce water to a simmer and gently add raviolis.

7Cook for 4 minutes and remove with a slotted spoon to drain.

8Serve with warm tomato sauce.

9Garnish with basil leaves.
