- 1/2 tsp. parsley flakes
- 1/4 c. chopped mushrooms
- 1 Tbsp. skim milk
- pinch of basil
- salt and pepper to taste
Directions

1Beat egg and milk together.

2Pour into warm nonstick pan.

3As egg mixture sets, lift gently with spatula so uncooked mixture flows beneath.

4Cover egg mixture with mushrooms, pimento, basil, parsley, salt and pepper.

5Fold in half.

6Serve on heated plate.
