- 1 cup dry red wine
- 1 cup extra virgin olive oil
- 3 cloves garlic, minced
- 3 Tbsp. chopped fresh sage
- 2 tsp. dried thyme leaves
- 1 tsp. salt
- 1 tsp. pepper
- 1 leg of lamb (3 lb.), butterflied
Directions

1Mix wine, oil, garlic, herbs and seasonings.

2Pour over lamb in large resealable plastic bag; seal bag.

3Refrigerate 2 hours or overnight to marinate, turning occasionally.

4Preheat oven to 350F.

5Remove lamb from bag; discard marinade.

6Place lamb on rack in roasting pan.

7Bake 50 min.

8to 1 hour or until meat thermometer registers 160F (medium).

9Let stand 10 min.
