- 8 skin-on salmon fillets
- 2 tsp. oil
- 1 1/4 tsp. salt
- 1/2 c. finely chopped fresh dill
- 1/4 c. finely chopped fresh tarragon
- 1 tbsp. finely grated lemon peel
- 1 tbsp. sugar
Directions

1Prepare grill for direct grilling on medium.

2Brush grate until very clean.

3Combine dill, tarragon, lemon peel, and sugar and set aside.

4Pat salmon fillets dry.

5Brush fillets all over with oil; sprinkle with salt.

6Coat flesh sides with herb-rub.

7Push soaked skewers through salmon lengthwise; place, skin side down, on grill.

8Cover; cook without turning over 14 minutes or until just opaque.

9With metal spatula, scrape fillets from grill.

10If skin sticks to grate, remove fillet only.
