- 4 thin slices ham
- 1/4 c. plain yogurt
- 2 tsp. chopped chives
- 3/4 c. shredded Cheddar cheese
- sprigs of herbs (to garnish)
- hot buttered toast (to serve)
- 3 large eggs
- 1 tsp. mustard
- 2 tsp. parsley
Directions

1Preheat oven to 375°.

2Line 4 greased ramekin dishes (small souffle) with ham.

3In a bowl, beat together eggs, yogurt and mustard.

4Mix together chives and parsley.

5Stir 1/2 of herb mixture and 1/4 cup cheese into egg mixture.

6Spoon into dishes and top with remaining cheese and herbs.

7Bake until golden brown and set, about 25 to 30 minutes.
