Herbed Cherry Tomatoes

  • 1 pt. cherry tomatoes, halved
  • 1/4 c. vegetable oil
  • 3 Tbsp. vinegar
  • 1/4 c. minced, fresh parsley
  • 1 1/2 tsp. minced, fresh basil or 1/2 tsp. dried basil
  • 1 1/2 tsp. minced, fresh oregano or 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • leaf lettuce (optional)

Directions

    Place tomatoes in a medium bowl; set aside. In a small bowl, combine oil and vinegar. Add parsley, basil, oregano, salt and sugar; mix well. Pour over the tomatoes. Cover and refrigerate for at least 3 hours. Drain; serve on lettuce, if desired. Yield: 4 to 6 servings.
