- 2 1/2 to 3 pound broiler-fryer chicken
- 2 tbsp. butter
- 2 tbsp. olive or possibly vegetable oil
- 1/4 c. finely minced onion
- 1/4 c. lemon juice
- 2 tbsp. Worcestershire sauce
- 1/2 teaspoon dry basil leaves
- 1/4 teaspoon dry marjoram leaves
- 1/4 teaspoon dry oregano leaves
- 2 lg. cloves, garlic, finely minced
Directions

1Cut chicken into pcs; cut each breast half into halves and remove skin.

2Heat butter and oil in rectangular 9x13x2 inch baking pan in 375 degree oven till butter is melted.

3Stir in remaining ingredients except chicken.

4Place chicken meaty sides down in pan, turning to coat with herb mix.

5Bake uncovered 30 min.

6Turn chicken; bake till thickest pcs are done, about 30 min longer.
