  • 2 1/2 to 3 pound broiler-fryer chicken
  • 2 tbsp. butter
  • 2 tbsp. olive or possibly vegetable oil
  • 1/4 c. finely minced onion
  • 1/4 c. lemon juice
  • 2 tbsp. Worcestershire sauce
  • 1/2 teaspoon dry basil leaves
  • 1/4 teaspoon dry marjoram leaves
  • 1/4 teaspoon dry oregano leaves
  • 2 lg. cloves, garlic, finely minced

Directions

    Cut chicken into pcs; cut each breast half into halves and remove skin.

    Heat butter and oil in rectangular 9x13x2 inch baking pan in 375 degree oven till butter is melted.

    Stir in remaining ingredients except chicken.

    Place chicken meaty sides down in pan, turning to coat with herb mix.

    Bake uncovered 30 min.

    Turn chicken; bake till thickest pcs are done, about 30 min longer.
