Herbed Mashed Potatoes

- 4 large potatoes, peeled and cubed
- 13 cup chopped onion
- 1 garlic clove, minced
- 1 tablespoon margarine
- 34 cup sour cream
- 1 teaspoon dill weed
- 12 teaspoon salt
- 12 teaspoon dried rosemary (crushed, if desired)
- 14 teaspoon cayenne (optional)
- paprika (optional)
Directions

1Place potatoes in a saucepan and cover with water.

2Cover and bring to a boil over medium-high heat and cook for 15-20 minutes or until tender.

3Meanwhile, in a skillet, saute onion and garlic in margarine until tender.

4Drain and mash the potatoes; add onion mixture, sour cream, and seasonings.

5Spoon into a greased 1 1/2 quart baking dish and sprinkle with paprika, if desired.

6Cover and bake at 350F for 25 minutes.
