  • 2 lb. beef roast (3 to 4-inches thick)
  • 2 Tbsp. shortening
  • 1 (1 lb.) can tomatoes
  • 1/4 c. dry red or white wine
  • 3/4 c. chopped onions
  • 1/4 c. finely chopped carrot
  • 1/4 c. finely chopped celery
  • 1/2 tsp. minced garlic
  • 1 tsp. salt
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 1/4 tsp. pepper

    Brown meat well in shortening.

    Add remaining ingredients. Cover and bake in 325° oven for 1 1/2 to 2 hours, until meat is fork-tender.
