Herbed Potatoes

Ingredients

  • 2 lb. potatoes, peeled and cubed
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 c. milk
  • 1 Tbsp. dried chives
  • 1 1/2 tsp. lemon juice
  • 1/4 c. butter or margarine, softened
  • 1/2 tsp. garlic salt
  • dash pepper

Directions

    Cook potatoes in boiling water until tender.

    Meanwhile, thoroughly blend cream cheese, 1/4 c. milk, chives and lemon juice and set aside.

    When potatoes are done, drain well.

    Mash with mixer on lowest speed.

    Add remaining milk, butter, garlic salt and pepper.

    Blend in cream cheese mixture.

    Pour into casserole dish and garnish with additional chives and butter.

    Microwave 5 to 10 minutes if serving immediately.

    You may cover with foil and freeze up to 4 weeks.

    Reheat at 350° for 1 hour.
