Herbed Squash Casserole

- 2 lbs yellow squash
- 1 large egg
- 12 cup mayonnaise
- 1 tablespoon finely chopped fresh chives
- 1 tablespoon chopped fresh basil
- 12 teaspoon chopped fresh thyme
- 12 teaspoon salt
- 14 teaspoon fresh ground black pepper
- 1 14 cups shredded sharp cheddar cheese
Directions

1Preheat the oven to 350/.

2Slice the squash into 1/2-inch slices.

3Steam the squash for 12 minutes or until tender when pierced with a fork.

4While the squash is steaming, mix the egg, mayonnaise, chives, basil, thyme, salt, and pepper in a medium mixing bowl.

5Remove the squash from the steamer basket.

6Add the squash and 3/4 cup of the cheese to the herbs and stir gently to combine.

7Pour into a 11x7 baking dish and top with the remaining 1/2 cup of cheese.

8Bake for 30 minutes.
