Herbed Tomato Chicken

Ingredients
- 2 medium onions, sliced
- 2 cloves garlic, minced
- 3 whole medium chicken breasts, skinned and halved lengthwise
- 1 (7 1/2 oz.) can tomatoes, cut up
- 1/2 c. tomato sauce
- 1 (2 1/2 oz.) jar sliced mushrooms, drained
- 1/4 c. chopped green pepper
- 1 tsp. dried basil, crushed
- 1 tsp. salt
- 1 bay leaf
- 1/4 c. dry white wine
Directions

1In skillet, combine onions, garlic and 1/2 cup water.

2Bring to boiling.

3Cover and simmer 10 minutes or until onion is tender. Drain.

4Add chicken to skillet.

5Combine undrained tomatoes, tomato sauce, mushrooms, green pepper, basil, salt, bay leaf and dash of pepper.

6Pour over chicken, cover and simmer for 30 minutes.

7Stir in wine and cook, uncovered, for 15 minutes more.

8Remove bay leaf. Skim excess fat from juices.

9Transfer chicken and sauce to serving platter.
