Herbed Tomato Soup

Ingredients
- 1/2 c. chopped onion
- 1 clove garlic, crushed
- 1 Tbsp. butter
- 2 (14 1/2 oz.) cans stewed tomatoes
- 1 tsp. basil
- 1 can chicken broth
- 2 Tbsp. chopped parsley
Directions

1In a medium saucepan, saute onion and garlic in butter until onion is soft.

2Add tomatoes, basil, broth and parsley. Simmer 10 minutes. Cool for 10 minutes.

3Place in blender container. Cover and blend thoroughly.

4Return to saucepan.

5Heat thoroughly. Garnish with additional parsley.

6Makes about 5 cups.
