  • 2 tablespoons Flora Cuisine
  • 1 onion peeled and sliced
  • 1 clove garlic peeled and crushed
  • 1 13/16 cups courgettes sliced and quartered
  • 7 15/16 ounces unsmoked back bacon chopped
  • 2 11/16 cups chopped tomatoes can
  • 2 3/4 cups beans can reduced salt baked
  • 1 tablespoon tomato puree
  • 1 bouquet garni
  • 4 ounces pork sausage smoked, sliced, optional
  • black pepper
  • 7/8 cup garlic or plain, flavoured croutons

Directions

    Heat the Flora in a large saucepan and fry onion, garlic, courgettes and bacon until the bacon is lightly browned. Add tomatoes, baked beans, tomato puree, bouquet garni and pepper to taste and simmer for 10 minutes.

    Add smoked pork sausage and simmer for further 5-10 minutes. Turn into a casserole dish.

    Bake in preheated oven at 180°C, 160°C fan, Gas 4 for 15 minutes and serve sprinkled with the croutons.
