Ingredients

  • 1 lb. hamburger
  • 2 stalks celery
  • 2 carrots
  • 1 bell pepper
  • 1 large onion
  • 8 oz. elbow macaroni, cooked
  • 1/2 c. salsa
  • 1/2 lb. grated cheese
  • 2 cans tomatoes
  • 1 c. V-8 juice
  • 2 tsp. chili powder
  • salt
  • pepper

Directions

    In a heavy skillet brown hamburger lightly and remove fat. Chop celery, carrots, pepper, onion and canned tomatoes.

    Add all ingredients to hamburger except cheese and V-8.

    Saute until onions appear transparent.

    Stir in V-8 juice.

    Cover and steam for 3 to 5 minutes or until carrots are tender.

    Sprinkle cheese over mixture.

    Cover.

    Allow cheese to melt.

    Serve.
