  • 1 Tbsp. cornstarch
  • 6 c. whole milk
  • 2 1/2 c. sugar
  • 4 large eggs
  • 1/2 tsp. salt
  • 1 (13 oz.) can evaporated milk
  • 1/2 pt. whipping cream
  • 2 pds. vanilla
  • 25 lb. crushed ice
  • ice cream salt

Directions

    Mix cornstarch with 1/2 cup milk, add 1 1/2 cups milk and cook in double boiler until thick, beating constantly to avoid lumping. Blend sugar, eggs, salt and evaporated milk in electric mixer.

    Add hot cornstarch mixture and beat well.

    Add whipping cream, remaining milk and vanilla, pour into electric mixer.

    Pack with layers of ice and salt.

    Cover freezer tightly and store.
