- 1/4 c. Crisco shortening or Crisco oil
- 1 1/2 c. self-rising cornmeal
- 1/4 tsp. baking soda
- 1 1/4 c. buttermilk
- 1 egg, slightly beaten
- 1 Tbsp. Crisco shortening, melted
Directions

1Heat 1/4 cup Crisco shortening or oil to 365° in electric skillet or on medium-high heat in heavy skillet.

2Combine cornmeal and baking soda in medium bowl.

3Add buttermilk, egg and 1 tablespoon melted shortening.

4Stir just until dry ingredients are moistened.

5Pour 1/4 cup batter into skillet for each hoe cake. Fry 1 or 2 minutes or until golden brown on each side.

6Add additional shortening, if necessary.

7Drain on paper towels. Serve immediately.

8Makes 6 servings.
