- 2 Tbsp. Crisco shortening or Crisco oil, divided
- 1 1/2 c. self-rising cornmeal
- 1/4 tsp. baking soda
- 1 1/4 c. low-fat buttermilk
- 1 egg, lightly beaten
Directions

1Combine cornmeal and baking soda in medium bowl.

2Add buttermilk, egg and one tablespoon melted shortening.

3Stir just until dry ingredients are moistened.

4Heat 1 tablespoon Crisco shortening or Crisco oil on medium-high heat in heavy large nonstick skillet.

5Pour 1/4 cup batter into skillet for each hoe cake.

6Fry 1 to 2 minutes or until golden brown on each side. Drain on paper towels.

7Serve immediately.
