- 1 1/2 c. self-rising cornmeal
- 1/4 tsp. baking soda
- 1 1/4 c. buttermilk
- 1 egg, slightly beaten
- 1 Tbsp. Crisco shortening, melted
- 1/4 c. Crisco shortening
Directions

1Combine cornmeal and baking soda in medium bowl.

2Add buttermilk, egg and 1 tablespoon melted shortening.

3Stir just until moistened.

4Heat 1/4 cup shortening on medium-high heat in large, heavy skillet.

5Pour 1/4 cut batter into skillet for each hoe cake.

6Fry 1 to 2 minutes or until golden brown on each side. Add additional shortening, if necessary.

7Drain on paper towel. Serve immediately.

8Makes 6 servings.
