- 1/2 cup Yellow cornmeal
- 1 1/2 cup white corn meal
- 1 cup gluten-free all purpose flour (or regular flour)
- 4 tsp baking powder
- 1/2 tsp salt
- 2 tbsp vegetable oil
- 2 1/2 cup soymilk (or milk of your choice)
Directions

1Combine cornmeal, flour, baking powder, & salt in medium bowl & mix well.

2Stir in oil.

3Add just enough milk to batter to make the batter the consistency of pancake batter & mix well.

4Spray skillet/griddle with cooking spray.

5Preheat pan over medium-high heat.

6Pour batter by 1/4 cupfuls onto hot griddle/skillet.

7Cook until cakes are browned on both sides, about 1 to 2 minutes per side.

8Serve hot with butter & honey/syrup.
