Hog Maw Salad

Ingredients
- 1 hog maw
- 2 lemons or more
- 2 cloves garlic or more
- 1 tsp. basil or oregano
- 1/2 c. chopped parsley
- 1/4 c. olive oil
- crushed red pepper
Directions

1Turn maw inside out and expose seam lined with a ridge of white fat.

2Pull or trim off fat from seam and anywhere else you see it.

3Wash maw in cold water 3 times.

4Put maw in pot; cover with water and boil 10 minutes.

5Take maw out and throw water away.

6Cut maw into small pieces (1/2-inch).

7Put back in pot; cover with new water.

8Cook at a slow boil for 3 1/2 to 4 1/2 hours until chewable.

9Cool maw.

10Add lemon juice and all other spices except red pepper.

11Mix and chill.

12Serve on romaine. Sprinkle on red pepper.
