Holiday Beef Roast

Ingredients

  • 4 1/2 to 5 lb. shoulder, cut or middle chuck
  • 2 garlic cloves
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • paprika
  • dash of pepper
  • 3 Tbsp. hot melted shortening
  • 3 onions, sliced
  • 2 carrots, cut lengthwise

Directions

    Rub meat with cut cloves of garlic and dredge with flour. Sprinkle with salt, pepper and paprika.

    Place in roasting pan in which shortening has been melted.

    Arrange onions and carrots around and under meat.

    Place in preheated oven and roast at 325° allowing 25 to 35 minutes per pound.

    (Do not turn roast with a fork.

    Piercing the seared outer coat releases juices that should remain inside.

    Do not baste.)

    Thicken gravy after roast is done and lifted from the pan.
