- 1 large head cauliflower
- 4 ounces sliced mushrooms, drained or 12 cup fresh mushrooms, sliced
- 12 cup green pepper
- 14 cup butter
- 13 cup flour
- 2 cups milk
- 1 teaspoon salt
- 1 cup swiss cheese, grated
- 13 cup cheddar cheese, grated
- 2 tablespoons chopped pimiento
Directions

1Break cauliflower into medium size flowerets.

2Cook in boiling water until crisp tender.

3Drain and set aside.

4In 2- quart saucepan, saute mushrooms, green pepper in butter until tender.

5Blend in flour.

6Add milk and cook 5 to 10 minutes stirring until thickened.

7Add salt, cheeses, and pimento; mix well.

8Place layers on cauliflower in casserole with cheese sauce.

9Bake in 325F oven for 15 minutes.
