- 1 large head cauliflower
- 1 (2 oz.) can sliced mushrooms
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 c. milk
- 1/2 tsp. salt
- 1/2 c. shredded Swiss cheese
- 1 Tbsp. chopped pimento
Directions

1Bread cauliflower into medium sized flowerets; cook in boiling water until tender, about 10 minutes.

2Drain well; set aside.

3In saucepan, saute mushrooms in butter.

4Blend in flour gradually. Stir in milk.

5Cook, stirring constantly, over medium heat until thick.

6Stir in salt, cheese and pimento.

7Place 1/2 of cauliflower in buttered 2-quart casserole.

8Cover with 1/2 the sauce.

9Add remaining cauliflower and top with remaining sauce. Bake at 325° for 15 minutes.
