Ingredients

  • 2 c. sugar
  • 1/2 c. light corn syrup
  • 1 c. coarsely chopped nuts
  • 1/4 c. minced preserved ginger (optional)
  • 1/2 c. water
  • 2 egg whites
  • 1/4 c. chopped candied cherries

Directions

    In heavy medium saucepan, over low heat, cook and stir sugar, water and corn syrup until sugar dissolves.

    Increase heat to medium.

    Cook, without stirring, until a candy thermometer registers 268° (hard ball stage) or until small amount dropped into very cold water forms a ball.
