Holiday Ice Cream Mold

  • 1 c. heavy or whipping cream
  • 1 c. chopped candied red cherries
  • 1/2 c. ground almonds
  • 1/2 tsp. ground cardamon
  • 2 pt. vanilla ice cream, softened

Directions

    In large bowl with mixer at medium speed, beat heavy or whipping cream until soft peaks form.

    Reduce mixer speed to low; beat in remaining ingredients just until blended.

    Pour into 6 cup mold.

    Cover with foil or plastic wrap and freeze until firm. With metal spatula, loosen edges of frozen mixture from mold.

    In large bowl or sink of very hot water, dip frozen mixture almost to top to loosen; dry mold with towel.

    Invert mixture onto platter. Return to freezer.
