- 1-1/3 cups shredded coconut (Kosher for Passover)
- 1/3 cup sugar
- 3 Tbsp. matzo meal
- 1/8 tsp. salt
- 2 egg whites
- 1/2 tsp. almond extract
- candied cherries*
Directions

1Mix coconut, sugar, matzo meal and salt in large bowl.

2Stir in egg whites and almond extract until well blended.

3Drop teaspoonfuls of dough onto lightly greased cookie sheets.

4Press 1 whole candied cherry or almond into center of each cookie.

5Bake at 325F for 20 minutes or until edges are golden brown.

6Immediately remove from cookie sheets.

7Cool on wire racks.

8Note: Recipe can be doubled.
