Ingredients

  • 1-1/3 cups shredded coconut (Kosher for Passover)
  • 1/3 cup sugar
  • 3 Tbsp. matzo meal
  • 1/8 tsp. salt
  • 2 egg whites
  • 1/2 tsp. almond extract
  • candied cherries*

Directions

    Mix coconut, sugar, matzo meal and salt in large bowl.

    Stir in egg whites and almond extract until well blended.

    Drop teaspoonfuls of dough onto lightly greased cookie sheets.

    Press 1 whole candied cherry or almond into center of each cookie.

    Bake at 325F for 20 minutes or until edges are golden brown.

    Immediately remove from cookie sheets.

    Cool on wire racks.

    Note: Recipe can be doubled.
