- 3 lb. (about 12 medium), potatoes, peeled and cooked (hot)
- 1 ( 8oz.) pkg. cream cheese (room temperature)
- 1/4 c. butter or oleo
- 1/2 c. commercial sour cream
- 1/2 c. milk
- 2 eggs, slightly beaten
- 1/4 c. finely chopped onions
- 1 tsp. salt
- dash of pepper
Directions

1In a large mixing bowl, mash hot potatoes by hand.

2When no lumps are left, add cream cheese in small pieces, then add butter. Beat well until cheese and butter are melted and completely mixed.

3Mix in sour cream.

4To milk, add eggs and onions.

5Fold into potato mixture along with salt and pepper.

6Beat well until light and fluffy.

7Place in a 9-inch round casserole and refrigerate for a few hours or overnight.

8Bake in a preheated oven at 350° for 40 to 45 minutes.

9Makes 8 to 12 servings.
