Holiday Mashed Potatoes Recipe

  • 3 pound (about 12 med.) potatoes, peeled, cooked and warm
  • 1 (8 ounce.) pkg. cream cheese at room temperature
  • 1/4 c. butter
  • 1/2 c. commercial lowfat sour cream
  • 1/2 c. lowfat milk
  • 2 Large eggs, lightly beaten
  • 1/4 c. finely minced onions (optional)
  • 1 teaspoon iodized salt
  • Dash of pepper (optional)

Directions

    In large mixing bowl (or possibly by hand) mash warm potatoes.

    When all lumps are removed, add in cream cheese in small pcs, then the butter.

    Beat well till cheese and butter are both melted and completely mixed.

    Fold in lowfat sour cream.
