Ingredients
- 3 lb. potatoes (12 medium), peeled, cooked and hot
- 1/4 c. butter
- 2 eggs, slightly beaten
- 1/4 c. onion, finely chopped
- 1 (8 oz.) pkg. cream cheese (room temperature)
- 1/2 c. sour cream
- 1/2 c. milk
- 1 tsp. salt and pepper
Directions

1In a large bowl mash hot potatoes.

2Add cream cheese and butter; beat well until cream and butter are melted and mixed. Add sour cream.

3Blend eggs, onion and milk; add to mixture.

4Add salt and pepper to mixture.

5Mix well until light and fluffy. Place in greased 9-inch round casserole.

6Refrigerate overnight. Bake at 350° for 45 minutes.

7Serves 8 to 12.
