- 4 large potatoes, peeled and diced
- 1/4 cup milk
- 1/2 teaspoon salt
- 2 tablespoons butter, melted and divided in half
- 1 egg, beaten
- 8 oz cream cheese
- 1 cup small curd cottage cheese
- 5 green onions, finely chopped
- 1/2 cup butter flavored crackers, crushed
Directions

1Cook potatoes until tender.

2Drain and put in a large bowl. Add milk and half of the melted butter, fold in egg, cottage cheese, cream cheese, and onions.

3Place in a greased baking dish. Combine crackers and remaining butter and sprinkle over the potato mixture.

4Bake uncovered in a 350 degree oven for 20-30 minutes, or until crackers are lightly browned.
