- 1/2 c. bread crumbs (fine, dry)
- 1 tsp. dry oregano leaves
- 1/2 tsp. garlic salt
- 1 1/2 lb. eggplant, cut in 1/2-inch slices
- 1/2 c. butter, melted
- 1 (8 oz.) tomato sauce
- 1/2 c. grated Parmesan
Directions

1Heat oven to 400°.

2Mix crumbs, oregano and garlic salt.

3Dip eggplant slices in butter, then in crumb mixture.

4Place in single layer in greased jelly roll pan, 15 1/2 x 10 1/2 x 1-inch. Spread evenly with tomato sauce.

5Sprinkle with cheese.

6Bake until tender, 20 to 30 minutes.

7Serves 4 to 6.
