- 1/2 c. onion, minced
- 1/2 c. celery, minced
- 1/2 c. green pepper, minced
- 2 tbsp. reduced-calorie butter
- 2 1/2 c. cooked rice
- 1 c. cooked, minced broccoli
- 1 teaspoon salt
- 2 tbsp. parsley, minced
- Fresh parsley sprigs (optional)
Directions

1Combine onion, celery and green pepper; saute/fry mix in butter in nonstick skillet.

2Add in rice, broccoli, salt and parsley; stir well.

3Pour into hot nonstick 5-c. ring mold, and turn out onto serving platter.

4Garnish with sprigs of parsley before serving, if you like.

5Yield: 9 servings.
