Holiday Spinach Rice

- 3 Tbsp. butter or margarine
- 1/2 c. chopped green onions
- 1/2 c. sliced almonds
- 2 c. long grain rice, uncooked
- 2 (14 1/2 oz. each) cans clear chicken broth
- 1/2 tsp. pepper
- 2 (10 oz. each) pkg. frozen chopped spinach
- 2 c. shredded Cheddar
- 1/2 c. chopped pimento
- sliced almonds (to garnish)
Directions

1In 3-quart saucepan over medium heat, in hot butter, cook onions, almonds and rice until onions are tender, stirring constantly.

2Add broth and pepper.

3Heat to boiling.

4Reduce heat to low.

5Cover; simmer 15 minutes.

6Add spinach.

7Cover; simmer 10 minutes more or until liquid is absorbed, breaking up spinach with fork.

8Add cheese and pimento.

9Heat until cheese melts.

10Garnish with sliced almonds.

11Makes 8 cups or 12 servings.
