  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 4 tsp baking powder
  • 1 egg
  • 1 cup milk or( 1 10-oz can cream of corn
  • 1/4 cup vegetable oil
  • 1/4 tsp salt

Directions

    mix dry ingredients together.

    add eggs milk, or cream of corn, and oil.

    beat just until smooth, approximately 1minute (dont overmix) Pour batter into a greased 8 inch pan or greased muffin pan.

    Bake at 350F for 23 to 28 minutes.

    serve warm w/ butter.
