Homemade Minestrone

Ingredients

  • 1 (11 oz.) can kidney beans
  • 1 tsp. salt
  • 1 large clove garlic
  • 1/4 tsp. ground pepper
  • 1 Tbsp. olive oil
  • 3 Tbsp. butter
  • 1 (14 oz.) can crushed tomatoes or puree
  • 1/2 c. white wine
  • 1/4 lb. small shell pasta
  • 2 1/2 c. water
  • 1 small carrot, diced
  • 2 green onions, chopped
  • 2 stalks celery, chopped
  • 1 small, unpeeled zucchini, cut in cubes
  • 4 or 5 leaves Swiss chard or romaine, chopped
  • 1/4 c. chopped parsley

Directions

    Cook beans, salt, garlic, pepper, oil, butter, water and tomatoes over low flame, stir.

    Prepare vegetables and add to pot. Cover and simmer 1 hour.

    Add wine and pasta.

    Simmer 10 or 15 minutes.

    Serve.
